Hainanese Chicken Rice

Ingredients (Serves 2–4)

  • 435g jasmine rice (washed)
  • 531g water 
  • 300g chicken thigh 
  • 20g garlic 
  • 6g ginger, sliced 
  • 30g pandan leaves, tied into knots 
  • 2g salt 
  • 8g green onion 
  • 10g fish sauce 
  • 6g turmeric powder 
  • 3g cilantro 

Steps

  1. Place washed rice and water into the rice cooker pot. 
  2. Place chicken thigh pieces on top of the rice, then add pandan leaf knots. 
  3. Close the lid and select the "white rice" cooking program. 
  4. Let it rest for 10 minutes after cooking ends. 
  5. Open the lid and remove pandan leaves and chicken. 
  6. Mix the rice evenly with a rice paddle and serve.
