Mango Sticky Rice

Ingredients (Serves 2–4)

  • 350g glutinous rice 
  • 500g butterfly pea flower water (soaked from 10g dried
    butterfly pea flowers) 
  • 200ml coconut milk 
  • 60g white sugar 
  • 1.5g salt 
  • 200g ripe mango, peeled and sliced 
  • 1g toasted mung bean crisp 

Steps

  1. Place glutinous rice in the rice cooker pot. 
  2. Pour butterfly pea flower water until level with the rice. 
  3. Close the lid and start the "cook rice"
    function. 
  4. Pour coconut milk, sugar, and salt into the cooked rice. 
  5. Mix well. 
  6. Serve with mango slices and drizzle with extra coconut milk.
