Pandan Cake

Ingredients

  • 55g cake flour 
  • 50g fine sugar 
  • 170g eggs 
  • 153g coconut milk 
  • 30g pandan juice 
  • 25g vegetable oil 
  • 1.5g baking powder 
  • 0.5g salt 

Steps

  1. Separate egg whites and yolks into two bowls. 
  2. Beat egg whites until stiff peaks form. 
  3. Add coconut milk, pandan juice, oil, and salt to egg yolks; mix well. 
  4. Sift in flour and baking powder; stir into smooth batter. 
  5. Gently fold beaten egg whites into the batter. 
  6. Mix until uniform. 
  7. Grease the rice cooker inner pot. 
  8. Pour batter into the pot. 
  9. Tap gently to remove air bubbles. 
  10. Select "steam" or "cake" function and steam for about 90 minutes. 
  11. Open the lid when done. 
  12. Remove and serve.
