Pandan Cake
Ingredients
- 55g cake flour
- 50g fine sugar
- 170g eggs
- 153g coconut milk
- 30g pandan juice
- 25g vegetable oil
- 1.5g baking powder
- 0.5g salt
Steps
- Separate egg whites and yolks into two bowls.
- Beat egg whites until stiff peaks form.
- Add coconut milk, pandan juice, oil, and salt to egg yolks; mix well.
- Sift in flour and baking powder; stir into smooth batter.
- Gently fold beaten egg whites into the batter.
- Mix until uniform.
- Grease the rice cooker inner pot.
- Pour batter into the pot.
- Tap gently to remove air bubbles.
- Select "steam" or "cake" function and steam for about 90 minutes.
- Open the lid when done.
- Remove and serve.
